With Christmas right around the corner, & of course me being Mexican i want to hear some of your favorite Tamale Recipe's, also where did they originate from

there is a very small restarant right by my house called the Tamale factory, they have the best Tamale's i have ever had.
i always get the pork ones with there hot sauce on the side.
12 of them for $6.00
there hot sauce is smoking hot but so good.
the funny part is the place is such a dive you would never stop there unless you knew how good they were.

Dives are the best food places!

I have a bunch of mexicans that work for me, their wives make tamales that rule.

Of course it starts out with good matza or matsa...or whatever...I dont speak spanglish

I will get the procedure down soon.

Find out where they're from, with each state in Mexico or South American Countries Tamales are prepared different. I'm sure they're all tasty, don't get me wrong.
Living close to the Mexi border we have an abundance of tamales here, you guys would be stoked

I MISS TAMALES. THEY DON'T HAVE THEM IN NORTH GEORGIA! IF THEY DO THEY SUCK!
WHEN I WAS A KID WE WOULD RIDE THE FERRY BOAT FROM CRYSTAL BEACH TO GALVESTON AND THERE WAS A GUY THAT WOULD SELL THEM RIGHT AT THE FERRY LANDING, MAN THOSE THINGS WERE AWESOME!

dont need to make them as they seem to be for sale on every other corner around here. I love me some with sliced jalepenos in them. From what I hear is they are a pain in the ass to make, I'll stick to buying them

I agree with these guys,they are'nt that hard to make,but they are time consuming,that's why (from what I hear) when most families make them they do them "assembly line" style.

Me,,,I'm on my own when I make them...

I usually fill my tamales with a pork based spanish rice mixture,in the spanish rice I put some pulled/chopped style pork,chopped thick sliced smoked bacon,and petite cut corn,add the right blend of spices and such,and this stuff is the $h!t,I make this spanish rice stuff year round,and eat it on tortillas to save some extra work vs. making tamales all the time.

My biggest b!tch about making tamales is dealing with the corn leaf wrappers,they're a pain to deal with IMO,though recently I was watching a show on TV (A.B./no reservations in Chicago) and saw them making them with some sort of other style of wrapping,I immediately thought to myself "I gotta look into that deal",looked a whole lot easier than using the corn leaf wrappers.

As for the masa,the only tricky part is getting the consistency just right,but it gets easier the more you do it,but the basic recipe is a cinch,it's usually printed right on the masa package.

Just alternate adding extra masa or water till it's "right there",when it's the right consistency,it'll spread a lot like peanut butter or such.

As for the hot sauce,I use Tapatio hot sauce on mine,not too hot,not too mild,just right for this fella.

Man,just talking about this is making me want one.

I dont go for the "random" tamales out there,I'm way too picky an eater to do that,I just gotta know what all is going inside something like this if I'm gonna eat it.

Oh yeah,one last thing,if your gonna make these,dont d!ck around,get biggest phuckin tamale steamer pot you can find,trying to make do with generic pots will almost certainly result in some headaches.

I've had some with cheese and bell pepper, very good. Cheese and jalepeno would be awesome! I've never made them but have been saying I'm going to learn. Have to be careful who you buy them from, some still use the hogs head, and a friend found a whole eyelash in one. He won't eat them anymore. It was cooked, so whats the problem? LOL.
